Crock Pot Beef



Andy took out some little packages of Beef for BBQ that he'd purchased at the store a while back. Basically, these were little boneless thick strips of beef, not a super tough cut like a chuck steak, but not filet mignon quality. He never got around to firing up the grill. I quickly realized I needed to cook these if I wanted to save them. The crock pot was my answer. The result was a tender, savory concoction that we've been enjoying over brown rice and peas.

Crock Pot Beef
Ingredients:
1 large onion, sliced
1.5 lbs beef (you could use a roast if that's what you have)
1 can cream of mushroom soup
1/2 cup madeira wine
1 pkg Lipton onion soup mix

1. Put the sliced onion in the bottom of the crock pot. Put the beef over the top of the onions.

2. Sprinkle the Lipton onion soup mix over the top of the meat.

3. In a separate bowl, mix the soup and the wine until combined. Pour over the top of the meat. (You do not need to mix it at this point - just pour over the top.)

4. Put the lid on and cook on low for 6-8 hours.

A quick, delicious meal for a family on the go.
