Pulled pork in the oven

When we were camping at Mt. Rainier, Andy's Aunt Gretchen made the most delicious pulled pork and since then, we've been talking about making our own. Today, we bought a couple boneless pork shoulders and gave it a try. I have to say, I love pulled pork, but usually, I get all the fatty pieces (at restaurants and the like), but having my own pork, I could edit all the fatty stuff out, once it was cooked. People, this was some good pork!! Add to it, my friend Tori's famous beans, corn on the cob, and a homemade North Carolina BBQ sauce and it was one good Southern-style meal.

Oven roasted pulled pork:
Ingredients:
1 - 3lb boneless pork shoulder

Dry Rub:
1 tbs. plus 1 tsp. smoked paprika
2 tsp. brown sugar
1/2 tsp. celery seed
1/2 tsp. garlic salt
1/2 tsp. dry mustard
1/2 tsp. black pepper
1/2 tsp. cayenne pepper
1/2 tsp. onion powder
1/4 tsp. salt
Dash cumin

1. Mix rub all together in a small bowl.

2. Preheat oven to 300 degrees.
3. Take pork out of packaging and dry with paper towels.
4. Put in roasting pan.
5. Rub spices all over. Use all of the rub.
6. Put in the oven and slow roast for 3 hours. Temperature should be 170 degrees when done.
7. Remove from oven and let sit for 10 minutes.
8. Then take two forks and pull pork apart into shreds.



My North Carolina BBQ sauce...delightful!! (P.S. If you don't like mustard and vinegar, you won't like this sauce, but if you do, even just a little, you'll LOVE this!!)

I served the pork in a bowl by itself, with the sauce on the side, along with a more traditional BBQ sauce. I also served this with bread and butter pickles (probably the only time I'd choose a sweet pickle over a dill), but this could also be served with coleslaw any day (yum). I bought some Kaiser rolls as the bread for this sandwich.

Doesn't it look magnificent? All the men (Andy, Micah, Nathan and our friend, Dave) gobbled it right up.

  1. Oh my, Karin! I am totally intimidated by this...I have never made anything pork, but the chops. ;-) Joey would LOVE this!!! PS want to get Joey up there sometime within the next year ;-) What time of year is best to come? Summers? I want to get him up there when there's not a lot of rain...the rain in the morning, but clear in the afternoon type of weather ;-) So he can see the beauty of Washington!!!

  2. Bex, this is totally the easiest pork recipe you will EVER make...seriously - once you put the rub on the pork, it just sits in the oven for 3 hours - that's it! And the pulling it apart with 2 forks is actually kind of fun!! :) :)

    Would LOVE for you guys to come up - our summer is the best time to come up without rain...that's July and August...typically very little rain. We could have soooooooooo much fun!!!

  4. I am making this pulled pork. Yum. Eeeee. I will let you know how it goes! :) Becca, I can take some over. Brian is out of town this week. Maybe I can come over and then make it and we can all eat it for dinner. Sound good? Okay, good. See you Wednesday? Okay. I even have a pork shoulder in the freezer. What are the odds?
