Meatloaf and potatoes...aka...comfort food!









Wednesday nights are crazy in my house and I don't have time to cook dinner, so if I don't prepare ahead of time, we eat cereal...yum. The kids love it, but it just doesn't satisfy. So, tonight I was thinking ahead and decided to make my mom's meatloaf (the most moist meatloaf you'll ever eat) and a take on the Barefoot Contessa's Herbed Potatoes. The house smells so good, I can hardly wait for dinner tomorrow.

Mom's Meatloaf
Ingredients:
1 lb. ground beef
1/2 onion, chopped
3/4 cup oatmeal
1 egg
1 cup ketchup
Salt and pepper

Preheat oven to 350 degrees. Combine all ingredients in a bowl. Before mixing, grease a loaf pan. Using your clean hands (yes, your hands - they are the best mixing tool known to man), mix all the ingredients together. Put into a loaf pan and pat down. Put in oven for 1 hour.

My take on Herbed Potatoes
Ingredients:
Butter
Red Potatoes (small new potatoes will do)
Rosemary
Salt

In a pot, put about 1/4 cup of butter. Wait until it melts. Add red potatoes and two sprigs rosemary. Put the lid on and cook for 30 minutes at low-med (about a 3 on the stove). Move the pot around several times during the 30 minutes (just shake it a bit). When 30 minutes is up, take lid off, pierce potatoes with fork. They should be tender but not falling apart. Pull rosemary out, put potatoes in a bowl and add salt to taste. They are hearty, have that lovely fragrance and taste of rosemary and go PERFECTLY with meatloaf.

Add some green beans and dinner is served!!!
