Lemon squares
If you buy Lemon Squares in a box at the grocery store, I'd highly recommend trying this recipe instead. It's fast, easy and oh so yummy. Courtesy of our friend, Dave, I give you...lemon squares.
Lemon Squares
Ingredients:
2 cups sifted flour
1/2 cup sifted powdered sugar
1 cup butter
4 beaten eggs
2 cups granulated sugar
1/3 cup lemon juice
1/4 cup sifted flour
1/2 tsp baking powder
1. Sift together 2 cups flour and powdered sugar.
2. Cut in butter until clings together (so easy in the food processor).
3. Press into 9X13" greased pan and bake at 350 degrees for 20-25 minutes or until browned.
4. Meanwhile, beat eggs, sugar and lemon juice together.
5. Sift together 1/4 cup flour and baking powder.
6. Stir into egg mixture.
7. Pour over crust and bake at 350 degrees for 25 minutes.
8. When cooled, sift powdered sugar over top.
9. Cut into squares.
