Chicken sandwiches

We're blessed to have one of Micah's friends over today, so instead of two boys running all over the house, I have three! And they can sure build up an appetite! So, for lunch today, I needed to make something other than the standard mac-n-cheese, lunch meat sandwiches (which I love, but can get old), or PB&J. I just stopped at the fruit stand recently, so I had some fresh spinach (YUM - another veggie I LOVE raw, but HATE cooked), tomatoes and red onions. I had three pieces of chicken thawed in the fridge, so I dried them off, drizzled them with olive oil, salt and pepper and roasted them for 20 minutes in a 350 degree oven (they were smaller breasts - normally it takes around 30 minutes). Then I toasted some whole wheat thin bagels. **Side note, if you haven't seen these, they are in the bread section of the grocery store, next to the pitas. They are bagels, but super thin and only around 110 calories for the entire thing. They have them in Everything Bagels (my favorite), whole wheat and white.** I pulled some swiss cheese out of the fridge and started to compile.

Open the toasted bagel, add mayo for Nathan, nothing for Micah and his friend Andy, and mustard for me. Top all sandwiches with freshly washed spinach, tomato slices and thinly sliced chicken (I cut the chicken on the bias as thinly possible). Add a little red onion for me. Add cheese, if desired.

We had some whole grain goldfish and sliced Pink Lady apples to go with it. They were light, but filling, and quite tasty. All three boys scarfed them down quickly! We'll be eating these again for sure!
