Superbowl party

Anyone who knows me knows that I'm not a football fan. I love basketball, volleyball, tennis and a myriad of other sports, but football is not my thing. However, its become a bit of a tradition to have a Superbowl party among some friends of ours from church. Four couples and with children in tow all gather at one of our respective homes. The host couple makes the main dish, dessert and some side dishes, and the other couples are to bring appetizers and drinks. The men watch the game while the women chat in the kitchen (of course!) and tune in for the commercials, which really are the best part anyway. The kids are upstairs turning the house upside down.

I wanted to bring something other than the regular veggie tray or finger sandwiches and then I thought of meatballs. I love a good meatball, especially if it comes with a tasty sauce! So I made a version of "Go Team Meatballs" (adapted from a Gooseberry Patch recipe) and they turned out so well that I can't wait to make them again and save the leftovers for meatball sub sandwiches. YUMMY! So here's the adapted recipe...

1 lb. ground beef
3/4 c. bread crumbs (I used a mix of Italian and regular)
1/2 c. finely diced onion
1 beaten egg
1 t. salt
1/2 t. celery seed
1/8 t. onion powder
Ground pepper
8 oz. can tomato sauce
1 c. water
1 T. Worcestershire sauce

Combine the first 8 ingredients in a large bowl. Mix well and shape into 1 1/2 inch balls and arrange in an ungreased 9X13 baking dish. Mix remaining ingredients and pour over meatballs. Cover with aluminum foil and bake at 400 degrees for 45 minutes. Uncover and bake for an additional 15 minutes.

Transfer meatballs to a crock pot. In a separate bowl, mix another can of tomato sauce, more Worcestershire (as much or as little as you like...I like A LOT!), about 2 T. brown sugar, 2 T. honey, 2 tsp. minced onion, 1 tsp. garlic salt and 1/4 cup water, and 1/4 ketchup. Microwave for 2 minutes (put a plate over the top so it doesn't splatter).

Stir and pour over meatballs. Set your slow cooker to Low or Warm and let sit until the party! They are tender, sweet, a little spicy and delicious. Don't forget to bring toothpicks so people can easily spear a mouthful!

Next post, I'll tell you about the Oatmeal Icebox cookies that were so easy to make and taste scrumptious!

  3. There was a lot of food at the party and these were one of the few items that completely disappeared by night end!
