Fast and easy personal frittatas
Are you looking for a quick but healthy breakfast in the morning? Then whip up a batch of these personal frittatas the night before and have one or two on hand for the next morning. Best of all, you can personalize these with whatever ingredients you have on hand!! This is my interpretation of a Biggest Loser recipe.
Personal Frittatas
Ingredients:
8 eggs
Sauteed mushrooms (or other veggies, like peppers, onions, etc...)
1 cup shredded cheese (your choice)
Salt and pepper
1 small can drained, diced green chiles
Pam or other non-stick spray
Muffin tin
1. Spray eight muffin tins with non-stick spray.
2. Preheat oven to 350 degrees.
3. Mix eggs in a bowl. Add salt and pepper to taste. Add drained green chiles and mix.
4. Meanwhile, saute mushrooms, or other veggies until cooked.
5. Put even amount of veggie in bottom of each muffin tin. Pour egg mixture evenly over the top until all eight are filled.
6. Put in the oven for 9 minutes, or until almost set.
7. Remove from oven. Top with cheese. Cook for 10 more minutes.
8. Let cool for 2 minutes and remove from pan.
These are quick, can be as healthy as you want to make them, and are packed with protein and nutrients. Best of all, they contain my favorite food in the whole world: THE EGG!!!! YUM!
