Buttermilk Waffles

Ingredients:

3 large eggs, separated
Pinch of cream of tartar
1 cup buttermilk
1/2 tsp vanilla extract
2 tbs butter, melted
1 cup AP flour
3 tbs brown sugar
1/2 tsp salt
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon

1. Beat the egg whites and cream of tartar until stiff peaks appear. Set aside.

2. In a bowl, whisk together the egg yolks, buttermilk, vanilla and 2 tbs melted butter.

3. Into a large bowl, stir together the flour, brown sugar, salt, baking soda, baking powder and cinnamon.

4. Combine the dry ingredients with the wet ingredients and mix until incorporated. Fold the whites into the batter, gently.



The batter gets much fuller after you fold the egg whites in...

5. Grease the waffle iron and cook until golden brown.

Buttermilk, buttermilk, buttermilk

I bought a lot of buttermilk for St. Patrick's Day since soda bread requires quite a bit, but I ended up not making any because the brown bread was so good. But buttermilk doesn't last long in the fridge and mine was ready to expire this week. So I needed to use as much as I could (I hate wasting!!), so today, I went buttermilk crazy! I made Buttermilk Biscuits, Buttermilk Cupcakes with Chocolate Icing and Buttermilk Waffles for dinner! Yum, yum, yum. It was all good!!
