Grilled Honey and Walnut Squash



To go with our quiche, I whipped up some Grilled Honey and Walnut Squash. This recipe is totally inspired by the latest episode of Aarti Party, where Aarti made summer squash with hazelnuts, turmeric butter and honey. I used her concept and substituted with my own ingredients, and I gotta say, "You go, Aarti." This was absolutely delicious. Everyone agreed that this recipe was a keeper.

Grilled Honey and Walnut Squash
Ingredients:

2-3 summer squash, topped and tailed and sliced on the bias (slice them rather thick)
2 tbs butter
1 tbs honey
1 tsp cinnamon
1/3 - 1/2 cup walnuts, roasted and chopped
Olive oil
Salt

1. Prepare your squash by removing the top and the tail and then slicing on the bias in thick chunks. You want as much surface area as possible since you will be grilling these.

2. Put in a dry (no oil) grill pan, or cast iron pan over medium high heat and let them start to brown and blacken around the edges. When you see the edges start to brown, add about a tablespoon of olive oil and saute until they are crisp tender.

3. Meanwhile, in a bowl, combine butter, honey and cinnamon. Melt in the microwave for 30-40 seconds until drizzly and fragrant.

4. Toast the walnuts on the stove (keep an eye on these - they burn easily), and remove from heat and chop into small pieces.

5. When the squash is cooked, remove to a bowl and season with salt. Top with the walnuts and the honey-cinnamon butter. Stir to combine. Serve immediately.



Divine. Not kidding.
