Swedish Oven Pancake




Since I have to eat a lot of soft foods, I've been trying to find yummy, but soft things to eat for dinner. Then I remembered a recipe my very Norwegian and Swedish friend, Brita, shared with me for a Swedish Oven Pancake. Being 1/2 Swedish, I tried it right away and fell in love with it. I've been using it ever since and tonight, it was my dinner. Now, this recipe can be used for breakfast, brunch, dinner or dessert! I made a 1/2 recipe (just halved all the ingredients) since it was just me.

Swedish Oven Pancake
Ingredients:
4 eggs
1 tsp salt
1 qt. (4 cups) milk
2 cups flour (I use cake flour)
1/4 cup butter

1. Beat eggs together with salt.
2. Add milk, then flour. Mix well.
3. Preheat oven to 425 degrees.
4. Melt butter in 9X13" pan until pan is hot. Do not brown butter.
5. Pour egg mixture on top of melted butter in pan and bake for 30-45 minutes.

The pancake should puff up to the top (similar to a souffle) and be nicely browned. Let sit to sink. Add topping.

Toppings:
Lemon juice and powdered sugar (my favorite)
Strawberries
Peaches
Blueberries
Whip Cream
Jam with powdered sugar
Maple Syrup

This is a light, delicious meal or a perfect ending to a meal.

  2. When I make my oven pancake I usually make a more brunch time version of it, like a quiche (you can check it out on my blog www.SwedeandSavory.com). I will definitely try it with the toppings you had though, that sounds excellent!
