Chocolate Oatmeal Peanut Bars



Looking for a quick but yummy dessert bar to make? Look no further - these bars are simple to make, delicious to engulf and the cinnamon in them gives a lovely little aftertaste (in a good way)!

Chocolate Oatmeal Peanut Bars
Ingredients:
1 cup AP flour (AP = all purpose)
1 tsp cinnamon
1 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar (packed)
1 & 1/2 tsp vanilla (or almond extract)
1 egg
1 & 1/4 cups quick cooking oats
1 pkg bittersweet chocolate chips (I like using the darkest chocolate I can find)
3/4 cup peanuts

1. Beat butter, sugars and vanilla in mixing bowl until creamy.
2. Beat in egg.
3. Add flour and cinnamon, gradually.
4. Stir in oats, 3/4 cup chocolate chips and 1/2 cup nuts.
5. Spread into greased 9X13 inch pan.
6. Bake in 350 degree oven for 23 minutes.
7. Immediately, sprinkle with the remaining chocolate chips; let stand for 5 minutes (they will be shiny).
8. Spread with a butter knife and then sprinkle with remaining nuts.
9. Let cool - chocolate will harden.
10.Cut into bars.

  1. I'm going to try this, except I'm going to omit nuts in them and add chopped almonds on top so that my girls will give them a try.

  2. Strike that, I actually omitted nuts altogether and added toffee in its place...plus a little instant vanilla pudding with the flour...it's baking right now.

  5. Sorry - I've had problems with blogger all evening! This sounds good, K3! Interesting twist with the vanilla pudding. The recipe actually called for walnuts but I was out. Toffee is yumo, I bet that was good!
