My mom's macaroni and cheese

For lunch today, I made my mom's macaroni and cheese! Yummy! It's the best comfort food there is. I added a quick salad with strawberries and toasted pecans. Delightful!!

Mom's Macaroni and Cheese

For the white sauce:
2 tbs butter (NOT MARGARINE)
2 tbs flour
2 cups milk

3 tsp onion salt
2 tsp dry mustard
2 tsp Worcestershire sauce
1/2 tsp salt

8 oz macaroni noodles (cooked)

1-2 cups cheddar cheese shredded (as much or as little as you want)

Make the white sauce by melting the butter in a saucepan over medium heat. When melted, add the flour and cook for 1 minute. Slowly add the milk (I use non-fat) and whisk into the mixture. It will thicken. Add more milk and slowly whisk until incorporated. Do this until all the milk is incorporated. Add the onion salt, dry mustard and Worcestershire sauce. Whisk in and add the extra salt, if needed. Add half the shredded cheese and stir until incorporated.

Meanwhile, cook the macaroni noodles. Once cooked, add them to the sauce. Pour mixture into a 3 or 4 quart casserole dish or a 9X13 baking dish, coated with non-stick spray. Top with remaining cheese.

Cook at 350 degrees for 35 minutes. When it comes out, it will be hot, so let sit for 5 minutes before eating.

There's nothing like a slice of childhood memories!

  2. I love Mom's mac and cheese, but sadly Faith won't eat it...she likes box mac and cheese. It is tragic. I hope her tastebuds mature as she gets older. I, on the other hand, love this dish!
