White chocolate chip banana muffins



We are a muffin family. I've already told you about the poppyseed muffins that disappear lightning quick in my house, so today, I wanted to try something a little different. My official tasters (Micah and Nathan) said these were a hit!

Karin's White Chocolate Chip Banana Muffins

1/2 cup butter, softened
1 cup sugar
2 eggs
3 ripe bananas, mushed
2 cups flour
1 tsp baking soda
Dash salt
3/4 bag of white chocolate chips

Beat the butter until soft and creamy. Slowly add sugar until thoroughly mixed. Add the eggs one at a time until fully mixed. Then add the bananas. Meanwhile, sift the flour, baking soda and salt. Slowly add the flour mixture. Mix only until combined. Do not overbeat. Hand mix in the white chocolate chips.

Grease 2 muffins pans. This recipe makes 21 muffins. Scoop muffin mix into each tin. Bake at 350 for 22-25 minutes or until golden, brown and delicious and a toothpick comes out clean.
