Thai Chicken
My friend Brita can cook some weird things (sorry, B!), but occasionally she will serve up a little piece of heaven and about four visits ago, she whipped up this recipe for Thai Chicken that is nutritionally fortified, lower in fat and downright tasty. I've been craving it ever since and tonight I decided to satisfy my craving! It was as good as I remember it and I'm excited to eat the leftovers tomorrow.
Thai Chicken
INGREDIENTS
2 lbs. chicken, cubed and cooked
4 TBSP salsa
2 TBSP honey
2TBSP sesame oil
2 TBSP soy sauce
2 TBSP vinegar
3 green onions, minced
½ c. creamy peanut butter
1 cucumber, diced
4 tomatoes, diced
Sesame seeds
Extra green onions for the topping.
Cut and cook chicken and set aside.
Blend everything except tomatoes, cucumbers, and any other veggies you want to add.
Add warm cooked chicken to sauce and blend. Add tomatoes and cucumbers.
*Special Note: I doubled the sauce recipe since I cooked this over pasta and wanted to ensure we had enough moisture.
Serve over rice or noodles.

Mmmm! I forgot about that. I'm going to have to make that again! And yes...I do make some weird stuff. Although - not as much since I've been married. I remember Garth's shock as to what my version of a taco was back when we were dating. Now I limit my strange foods to just breakfast and lunch. ha.
