Leftover hardboiled eggs?

Do you have leftover hardboiled eggs after Easter? A quick and simple idea to use up those eggs is Spinach Salad.

Just take spinach, 3-4 hardboiled eggs (sliced lengthwise), crumbled bacon (or if you're out of bacon, just cut up and cook some ham), red onion (sliced thin and soaked in ice water for 15 minutes), and Parmesan cheese. I made a quick honey mustard dressing to go on top. Delicious!

Honey Mustard Dressing
Equal parts of mayo and honey
Splash of red or white wine vinegar
Mustard to taste (I use a mixture of yellow mustard and brown grain mustard)
Salt and pepper to taste

Mix and use immediately. It stores pretty well in the fridge for about 1-2 weeks.
