Meatball pizza


I love pizza and I love meatballs, but it's difficult to find a good meatball pizza, so I decided to make one instead!! I made mini turkey meatballs (baked and low fat), homemade crust and homemade pizza sauce (from those tomatoes I canned earlier this fall). It was an absolute delight!!

Karin's Baked Turkey Meatballs
Ingredients:
1 lb. ground turkey
1 egg
1 tbs fresh thyme
1/2 cup oatmeal
1/2 cup non-fat milk
1 tsp salt
1/2 tsp pepper
2 tsp onion or garlic powder
1/4 tsp freshly grated nutmeg

1. Preheat the oven to 425 F.
2. Mix all ingredients in bowl.
3. Make meatballs.
4. Spray pan with Pam.
5. Cook for 12-15 minutes.

Makes 24 meatballs.

The Old Farmer's Almanac Everyday Recipes Pizza Dough
Ingredients:
2 tbs butter
1 tsp sugar
1 tsp salt
1 pkg (2 & 1/4 tsp) active dry yeast
3 cups flour
Olive oil

1. In a 2-qt. saucepan, heat 1 cup of water, butter, sugar and salt stirring until the butter melts.
2. Cool to lukewarm and sprinkle yeast over mixture and let proof for a few minutes until dissolved completely.
3. Stir in flour.
4. Turn dough out onto lightly floured board and knead a few times, until smooth and elastic.
5. Grease a 2 qt bowl with olive oil, put dough in bowl, cover and put in a warm place for 45 minutes or until doubled in size.
6. Preheat oven to 450 F.
7. Punch dough down and divide in half.
8. Roll out and form two crusts, or wrap half up and put in refrigerator.
9. Put toppings on and bake for 15-20 minutes.

If you want a thicker dough, you can roll the entire thing out into one crust. I like my dough a little on the thin side.

Karin's Pizza Sauce
Ingredients:
1 jar of canned tomatoes
1 tube (4.5 oz) of tomato paste
Sugar
Dried herbs (oregano, basil, thyme, sage)
Salt and pepper

1. Pull tomatoes from can and chop thoroughly; put in saucepan.
2. Add tomato paste and stir.
3. Flavor with herbs, sugar, salt and pepper.
4. Heat through.

I used a variety of cheeses: Mozzarella, Provolone, Romano, Parmesan and Gouda.

  2. made these turkey meatballs for Presley over the weekend. I flattened them out to be small patties. I popped them in the freezer and I just grab one out in the morning or pop it in the microwave to defrost. They are great and a quick, healthy meal for little miss P.
