Cream Cheese-Chocolate Chip Pastry Cookies
Andy had a cookie exchange at work, so I made a variety of cookies for him, including sugar cookies, chocolate chip shortbread and checkerboard cookies. But I saved the best for last. These pinwheel cookies are made with puff pastry, chocolate chips, cream cheese and sugar. Can you say YUM? The recipe is from a Best Loved Cookies little booklet I bought at a grocery store checkout stand years ago.
Cream Cheese-Chocolate Chip Pastry Cookies
Ingredients:
1 pkg frozen puff pastry, thawed
1 pkg (8 oz) cream cheese, softened
3 tbs granulated sugar
1 & 3/4 cup chocolate chips
1. Roll 1 sheet puff pastry to 14X10 inch rectangle on floured surface. Combine cream cheese and sugar in small bowl. Spread half the cream cheese mixture over puff pastry, leaving 1-inch border on 1 long side.
2. Sprinkle with half the chocolate chips.
3. Roll up, starting at long side covered with cream cheese. Seal edge by dampening with water.
4. Repeat with other puff pastry sheet, remaining cream cheese and chocolate chips.
5. Refrigerate both rolls for 1 hour.
6. Preheat oven to 375.
7. Cut rolls into 1 inch slices. Place cut side up on a parchment lined or greased cookie sheet.
8. Bake for 20-25 minutes. Let stand for 2 minutes.
